
Fourth-semester students from the Nutrition and Dietetics program at the Industrial University of Santander, along with intern Laura Giovanna Álvarez Ibáñez and professor of Food Legislation and Standardization Sandra Bueno, participated in the “Standardizing with Mankka” conference organized by the Buen Ambiente Corporation (Corambiente).
Corambiente is an interdisciplinary organization committed to environmental conservation and strengthening the rural economy. Through its Mankka initiative, an agroecological market that promotes responsible consumption and fair trade of products grown by rural women in the region, the corporation promotes strategies that contribute to local food security and sovereignty.
The School of Nutrition and Dietetics has an agreement with Corambiente that allows its ninth and tenth grade students to do internships in community settings that combine academic training with the implementation of public policies on food security, nutrition, and sustainability. On this occasion, student Sara Juliana Parra, during her rotation with Corambiente, led the activity together with nutritionist Angie Coronel.
During the workshop, students participated in the preparation and standardization of a tropical smoothie, applying principles of food regulation, safety, and sustainable use of local foods. This exercise strengthened their understanding of the role of nutritionists in developing public policies that promote healthy, sustainable, and culturally relevant diets, as well as creating a space for dialogue on the agroecological practices that underpin food security in rural communities.
