School of Nutrition Establishes Itself as an International Leader in Student Research

The School of Nutrition and Dietetics continues to establish itself as a leading international destination for education and research, strengthening its academic partnerships with highly regarded institutions in Latin America.

On this occasion, it welcomes Mexican student Yvanna Guadalupe Jiménez Gaytán, from the Autonomous University of Nuevo León, who is pursuing a Master of Science in Nutrition and is undertaking an academic stay in Colombia as part of her research process.

During her stay, Yvanna will work under the supervision of professors Alberto Ángel Martín and Natalia Rocío Moreno Castellanos, with whom she will advance her thesis project titled “Effect of free fructose and aspartame intake on the brain’s reward system: a study in male CD1 mice.” This research addresses a topic of high relevance to public health by analyzing how the consumption of sugars and non-caloric sweeteners can influence the brain mechanisms associated with reward, motivation, and eating behavior.

The study evaluates variables such as food intake, body weight, and neuronal activation using specific markers such as the c-Fos protein, providing key scientific evidence for understanding phenomena related to obesity and other metabolic disorders.

Professor Ángel noted, “The arrival of international students like Yvanna Guadalupe reflects the school’s standing as an attractive academic environment for conducting high-level research, as well as its commitment to knowledge generation, scientific cooperation, and comprehensive education in global contexts.”

The School of Nutrition and Dietetics not only trains talent but also positions itself as an international hub for research that connects science, innovation, and cooperation to transform global health.
